To turn off ferries:
Menu - Route - Click on the route option (Fast/Fast with traffic/Short/Tourist/...) - Here you will find the option to Avoid ferries

To turn off trains:
Menu - Route - Public transport route - Options - Here you can choose which means of transport you prefer
